Bright Pink Valentine! Banana Beet Collagen Smoothie

Valentines come with a big dose of heavy duty sweets, rich meals, and often a bit too much champagne. This smoothie is a lighter, kid friendly tidbit to toss into your week to keep on celebrating but feel fresh and bright at the same time. I just had this for a morning snack and it felt so good. It’s the perfect amount of beet flavor, but leans more towards the icy sweet end of things. You will need a high powered blender for this smoothie, as taking a raw fresh beet from chunk to blend takes some serious work.

We’re planning on a Valentines at home, so this will be on the menu for breakfast! I want to start our day off with something pink and festive, but also keep it light since we will be making a rich and indulgent dinner!

I added in Vital Proteins Vanilla Collagen to this smoothie, the vanilla really brings the sweetness out, and collagen has unending benefits. I’m sure you have been seeing and reading about it everywhere. I have a post coming up  that gives a run down of my favorite collagen and gelatin products, as well as the benefits I have seen from using them. But the readers digest and why I made sure to get some collagen in this smoothie, is that it aids in hair/skin/nail health, and muscle recovery. I am still super sore from the Northwest Yoga Conference so I am getting collagen in everywhere I can to help my soreness diminish more quickly, and my muscles grow!

Ingredients:

1/2 one raw beet

1 frozen banana

1/4 cup frozen pineapple

1 scoop Vital Proteins Vanilla Collagen

1 cup almond milk

1/2 cup water

I topped my smoothie with some Love Bark, but it would also be amazing with some granola, or nut’ola (then it would be all Whole30 Compliant!). My kiddos and I devoured this and it tasted and felt so good. You can also omit the water and make this into a smoothie bowl, and the consistency is similar to banana “nice cream”, and really fun to top! Also, here is my set up while I write, there are some serious perks to recipe making.
